Just the other day, a client of mine bought some Kale for the first time in their life. So they asked me for a recipe to prepare the kale. Here is one of my favourite kale recipes. Each serving contains 300 calories, 16 grams of protein, 10 grams of fat, 44 grams of carbs and 15 grams of fiber. Enjoy.
Green and filled with a lot of folic acid and anti-oxidants, this simple soup packs a lot of fiber:
• 1 cup dried navy beans
• 2 tsp, organic safflower oil
• 1 yellow onion diced
• 3 cloves chopped garlic
• 2 tsp dried sage
• Salt and pepper to taste
• 4 cups (1L) kale, chopped
• 2 tbsp extra virgin olive oil
• Vegetable bouillon
Put the navy beans in a bowl and cover them with water for soaking over night. Next morning drain water from beans and place beans in a deep saucepan with 4 cups of water. Boil beans and reduce to simmer for 60 minutes. Drain the water and put beans aside. Heat 2 tsp of safflower oil in a saucepan over medium heat. Add onions and garlic and cook until brown. Add 5 cups of water with vegetable bouillon to saucepan, beans, sage, salt and pepper. Bring to a boil, reduce heat, and simmer with cover on for 10 minutes. Add sliced kale and simmer for 5 minutes. Garnish with olive oil and serve. Serves 4.
